Romance is definitely in the air on Lauren and Darren’s wedding at Sault in Daylesford. A complete getaway that made this special day an event to remember.

Coming out of the chapel the couple were greeted with well-wishers. The day felt airy, dreamy and light. Sault Estate was named by the original owners, after a small French township renowned for its lavender, in the Provence-Alpes-Côte d’Azur region of South-eastern France.

At Sault our seasonal menus are designed to incorporate the freshest ingredients with the highest quality produce we can source, with a strong focus on our Sault kitchen gardens, regional organic farms and producers.

We are constantly seeking new ways to be more sustainable as we develop both inside the restaurant and out, as such, our kitchen gardens are continually expanding with this in mind. What started as six small herb beds is now acres of seasonal produce.

From little things, big things grow.
